Grilled Chicken Noodles



Hey my loves. It's been a while since I've posted a recipe on the blog, so I thought I'd switch it up!
I made this last week, and me and my hubby loved it! Its simple, quick, clean & really yum!
Here's what I used...

Stir Fry Vegtables

  • 1 bell pepper
  • Baby corn
  • 1 onion
  • 1 green chili
  • Mushrooms
  • 1/2 of a carrot
  • Salt & pepper
  • Red wine (or grape) Vinegar
  • Vegtable Stock Cube non-diluted 

  • 1 Chicken breast fillet
  • Salt & pepper
  • Lemon Juice
Let's get cooking!
Okay so turn your oven on to 180C degrees and set it to the grill option (you could also bake it in the oven) while you prepare your chicken. Sprinkle salt and pepper then a bit of lemon juice to one side and rub it in. Turn it over and do the same to the other side. Place your chicken breast on a baking/roasting tray drizzle a little bit of oil on it, and place it in the oven for 20 minutes. More if you have more chicken.

Once you have prepared all of your veggies, place them in a wok (or any other pan) with oil and get them on a medium to high heat. You want the veggies to cook but still have a nice crunch. Add salt & pepper to taste, and one full veggie stock cube whole. Add a splash of vinegar, and remember to stir along the way. Taste your veggies to determine flavour and whether they have finished cooking. Once you feel they hace cooked through add either cooked egg noodles or rice.
Mix well together until the noodles/rice are hot. Taste to determine flavour. Add more salt, pepper, vinegar if you feel the need to.

Once the chicken is fully cooked, slice it up. Plate your noodles/rice and add a few slices of chicken on top - and Voila! You're done.
