Vanilla & Coconut Cupcakes

Hi ladies, hope you're all having a good day. I am a HUGE foodie. And I mean huge! I love trying out new things and I also love cooking new things. Recently I have been obsessed with baking cupcakes, and thought I'd do a little pictorial on them. Hope you enjoy!
Ingredients
Cupcakes
♥ 125g Self Raising Flour
♥ 125g Margarine
♥ 125g Sugar
♥ 2 Eggs
♥ Vanilla Flavouring
♥ Desiccated Coconut
Buttercream Icing
♥ 125g Butter
♥ 250g Icing Sugar
♥ Food Colourant
♥ Vanilla Flavouring
♥ Sprinkles (optional)
Equiptment
♥ Icing Bag (Or just use a ziplock bag/freezer bag with a tiny cut out in one corner)
♥ Cupcake Tin
♥ Cupcake Cases
Cupcake Mix
Preheat oven at 200 degrees celcius

Cream together the sugar & margarine |

Add 2 eggs, mix lightly |

Add a splash of vanilla extract |

Gradually fold in the flour, add a splash of milk if mixture is too thick |

I made my cupcakes only half coconut, so when I had filled half of my casings, I added a handful of coconut |

Fill the cases as evenly as possible |

Bake for 15-20mins |

Cream together butter & icing sugar |

Dip the end of a spoon into your colourant & splash it into the icing mix. (Yes seriously, a little goes a looong way!) |

Pipe or spread your icing onto your cupcakes & add sprinkles if you want! |
